1/2 cup shortening 125 mL1/2 cup granulated sugar 125 mL
1 tsp vanilla extract 5 mL
1/2 cup pure maple syrup 125 mL
2 eggs, lightly beaten 2
1 3/4 cups all-purpose flour 425 mL
2 1/2 tsp baking powder 12 mL
1/2 tsp salt 2 mL
1/4 cup milk 50 mL
1/2cup chopped nuts 125 mL
Method
- In a mixing bowl, cream together shortening, sugar and vanilla until well blended. Gradually beat in maple syrup. Add beaten eggs to mixture. Stir until well blended. In a small mixing bowl, combine flour, baking powder and salt. Alternately add the dry ingredients and the milk to the maple mixture until well blended and smooth. Fold in nuts.
- Place batter in a greased 8 x 8 inch (20 x 20 cm) baking pan and bake in a preheated 350°F (180°F ) oven for 45 minutes or until tester inserted in the cake comes out clean. Cool.
- Makes 16 pieces.
