    Maple Syrup Cake is a very old, simple recipe that relies on maple syrup as the primary flavoring. It is a moist cake that doesn't really need an icing but a maple cream cheese topping is the icing on this cake.
    Ingredients
    1/2 cup shortening 125 mL
    1/2 cup granulated sugar 125 mL
    1 tsp vanilla extract 5 mL
    1/2 cup pure maple syrup 125 mL
    2 eggs, lightly beaten 2
    1 3/4 cups all-purpose flour 425 mL
    2 1/2 tsp baking powder 12 mL
    1/2 tsp salt 2 mL
    1/4 cup milk 50 mL
    1/2cup chopped nuts 125 mL
    Method
    1. In a mixing bowl, cream together shortening, sugar and vanilla until well blended. Gradually beat in maple syrup. Add beaten eggs to mixture. Stir until well blended. In a small mixing bowl, combine flour, baking powder and salt. Alternately add the dry ingredients and the milk to the maple mixture until well blended and smooth. Fold in nuts.
    2. Place batter in a greased 8 x 8 inch (20 x 20 cm) baking pan and bake in a preheated 350°F (180°F ) oven for 45 minutes or until tester inserted in the cake comes out clean. Cool.
    3. Makes 16 pieces.
