1/2 cup softened butter 125 mL1 cup granulated sugar 250 mL
2 eggs 2
1 1/2 cups all-purpose flour 375 mL
1/4 tsp salt 1 mL
1 tsp baking powder 5 mL
Grated rind of one lemon
1/2 cup milk 125 mL
1/2 cup wild blueberries, fresh 125 mL or frozen
Topping:
1/4 cup granulated sugar 50 mL
juice from 1 lemon
Method
- In a bowl cream butter and stir in sugar a little at a time. Beat in eggs. In a small bowl, combine flour, salt, baking powder and lemon rind. Add flour mixture alternately with milk to the butter mixture, blend until smooth. Fold in blueberries, if using frozen blueberries dust lightly with all-purpose flour. Place in a greased 10 x 6 inch (25 x 15 cm) loaf pan. Bake in a preheated 350° F (180°C) oven for one hour.
Topping
- In a small bowl, mix sugar and lemon juice until sugar is dissolved. Remove baked loaf from pan and spoon topping over the top of the hot loaf.
