2 cups fresh or frozen wild blueberries 500 mL1 cup white vinegar 250 mL
1 cup honey 250 mL
1 1/2 cups extra virgin olive oil 375 mL
Method
- In a blender or food processor, combine 1 cup (250 mL) of wild blueberries, vinegar, honey and olive oil. Blend until well combined and smooth. Stir in the remaining wild blueberries. Refrigerate until ready to serve.
- Serve with your favorite garden salad as an appetizer. Add a grilled, skinless chicken breast to the vinaigrette and salad and serve as a healthy light meal.
