Blueberry Vinaigrette

    This versatile dressing adds zing to any salad.
    Ingredients
    2 cups fresh or frozen wild blueberries 500 mL
    1 cup white vinegar 250 mL
    1 cup honey 250 mL
    1 1/2 cups extra virgin olive oil 375 mL
    Method
    1. In a blender or food processor, combine 1 cup (250 mL) of wild blueberries, vinegar, honey and olive oil. Blend until well combined and smooth. Stir in the remaining wild blueberries. Refrigerate until ready to serve.
    2. Serve with your favorite garden salad as an appetizer. Add a grilled, skinless chicken breast to the vinaigrette and salad and serve as a healthy light meal.
